If your meat is very fresh, you can make patties up to one week in advance - but I'd recommend no more than a day or two (unless you intend to freeze them).
I prefer to make patties the day before and refrigerate them - they tend to hold up better on the grill. They will fall apart more easily if they if they go on the grill immediately after being formed by your warm hands.

Frozen hamburger patties should not contain preservatives. The preservative method being used is freezing. It would not make sense to increase costs by adding chemicals to it. But check the ingredient statement to make sure. You can always contact the processor to verify nothing has been added.

You premake the burger patties, and when grilling, do them in batches of 10 or so each. Before you know it, you'll be finished with all of the burger patties. It will also help if you had a second pair of hands that worked on the buns, toppings and condiments while you worked on the grill.
You can mix a tablespoon of liquid smoke into the meat before you make your hamburger patties, or use a barbecue spice. You can find either in most large grocery stores. Also, using barbecue sauce on them will help give them a somewhat outdoorsy flavor.
