The answer depends on how big your turkey is. Assuming you have your oil up to temperature (350 degrees), its 3 - 4 minutes per pound. So for a 12 pound turkey (anything larger than this is very hard to do, its much harder to put and remove the turkey from the deep fryer, its hard to find a deep fryer large enough, etc.) its about 45 minutes. The turkey will come out of the oil a darker brown color than you have ever seen on an oven roasted turkey, and it will have the most amazing delicious smell you've ever had from a turkey!
