I have been informed by a pet store employee, that room temperature is fine as long as the room isn't cold(as in no heat). I have a Betta and he is thriving very nicely under that advice.
Typically a betta will increase in colour, and in some cases change colours somewhat as they age. If your betta begins to lose it's colour, check for water quality problems or an illness.

Inactivity is one sign. Also, If it has diseases, such as tail-rot, Icthyophthirius, (both which are very difficult to cure) and other aquatic parasites, it is very likely to die. And also, fish cannot live infinitely. Most bettas will live to be 3-4 years, however mine died at age 8 because of old-age.
When your betta fish dies and you want to bury it find a small container to put it in and find some soft padding (napkins,cloth,etc.) Bury it somewhere safe and nice like a garden its hard to let go of a friend but its best to put it to rest :)
