You should feed your fish only as much as they can eat in two minutes. They may look at you with their sad eyes and beg for more but they do not need any more.
If you feed them to much, the excess food will fall to the substrate and decompose causing a rise in nitrates that is bad for your fish. You should clean the substrate weekly and replace at least one to two gallons of water weekly.

That depends on if you fit the fish to the tank, or fit the tank to the fish. Koi will grow to the size of the tank. The bigger the tank, the bigger they will grow. You can put about 6 4 inch Koi in a 30 gallon tank. And of course, the bigger the fish, you need to adjust your tank size. The koi will quickly outgrow your tank! They will be like prisoners in a cell, not able to move around. Probably enough to survive if you keep up the waterchanges, but not enough to thrive. Koi belong in a pond.

Every tank must have at least 50% of its water replaced every week. If you follow the above rules your fish will stand a reasonable chance of surviving. If you don't, then I can guarantee that your fish will be constantly getting sick and will die much sooner than it should.
