A serving is considered 4 ounces, about half a cup. Two pounds should be enough to give everyone a serving. You'll need more if there isn't much else being served!
it would depend on the size of the potatoes. just buy a 5lb bag. i usually cook for 8 or more. (big family) i am usually left with 4 or 5 in the bag.
