There are 5 main types of tea, all of which come from Camellia sinensis, a plant originating from southern China which is now cultivated in many parts of Asia, Africa, Australia and elsewhere.

Black tea is tea which has been fully oxidized, while green tea has not been oxidized at all. Oolong teafalls between these two, as it is partially oxidized. Pu-erh tea is a tea which is fermented during the production process (it may or may not be oxidized as well). Finally, white teais tea produced from the first leaves and buds of the tea plant each year.

Tisanes, commonly but incorrectly called herbal teas, are not true types of tea, but are referred to as teas because they are also steeped to produce a beverage. Some of the more well known tisanes include peppermint tea, rooibos tea, ginger tea, chamomile tea and dandelion tea.

The beverage we commonly call tea is an infusion of the leaves, in most part derived from a single plant, Camellia senensis.

The plant has been exported from its original habitat, and the flavour of the infusion has altered depending on the soil, climate etc. of its new environment.

There are six traditional classifications for tea: White, Green, Yellow, Black, Oolong, Post-Fermented. The timing/manner of the harvesting, drying, fermentation, blending and other processing effect the type of tea produced.

Blended teas, such as Sri Lankan Gold, and Rooibos have become popular recently.

These are in most part teas grown in various areas of the world, which are harvested and blended with other long leafed teas to produce a distinctive colour and or flavour.

Scented teas, such as Chai, Russian Caravan, Lapsang souchong, Jasmine or Earl Grey are standard tea, usually black or green, with the addition of other edible botanicals which give the tea a distinctive scent and flavour.

Herbal teas also belong on this list.

They are an infusion of a wide and varied selection of herbs (leaves, flowers and/or roots).

Herbal teas are enjoyed the world over for the pleasure of drinking them and in many cases for the medicinal benefits. Herbal teas are (unless blended with Camellia senensis) caffeine free.

That being said, the number of specific blends of tea is so high there is no hard value for it.

The beverage we have commonly come to call tea is the result of steeping the leaves of the tea tree (Camelia sinensis) in boiling water. The three types are: green - freshly picked tea leaves are streamed, rolled on mats and heated. Steaming makes the leaves pliable and de-activates the enzymes that cause fermentation. Rolling releases the flavours and heating stabilises the tea; black - Fermentation is what make black tea black, gives it strength and richness. The leaves are placed in a warm moist room were they wilt and ferment, they are then rolled and eventually fired; or oolong - which is semi-fermented, causing the tea to be stronger than green tea but more delicately flavoured than the black tea.
