Avocado oil is as expensive as gourmet olive oil , like $7-$15 a pint. If you reaaly want some for flavor on salds , get what you can afford . It has a low smoke point, so it's not good for frying. If it's the health benefits your'e after, you can get them as gel-cap supplements .Not cheap either, but it all goes inside.

Avacado oil is from cold pressed avacados, much like the process used in making olive oil. I do not think one can make it at home, but it can be bought.
Walnut and Avocado oils, because the products themselves cost quite a lot when whole, so the extracts cost significantly more than olive or canola oils.

Different companies use different procedures. Some companies use expeller pressing, and put the entire avocado through a screw press, extracting an avocado oil (of dubious quality) which they can call "cold pressed". Some companies (such as Olivado) actually remove the skin and stone from the avocado, then cold press the flesh to extract a high quality oil.
