I use 2 packets of dry yeast for 5 pounds of flour. It really depends on what you are making with the dough. I let the dough rise for at least 6 hours and then it is fried in same portions. You can use 3 packets and it will rise faster, but not always the same taste depending on your other ingredients. Hope this helps.
