Weigh the amount of ham you intend to use for one sandwich, and multiply that by 35. Otherwise, ask your local deli when you go to buy the ham. Delicatessen staff are brilliant at these things.
I generally allow 1 lb of meat per 5 Sandwiches, but it's obviously a matter of taste. At that quantity, I won't use more than 1/5 lb per sandwich.
By that reasoning, purchase 17 lbs of ham. If you don't have a scale to help you with portioning the first few sandwiches, ask for 1lb of deli meat sliced separately so you can work out the portions before you're 70 sandwiches in and suddenly out of meat.
