SMTP(Simple Mail Transfer Protocol) servers run the SMTP protocol. When you connect to a SMTP server(which your e-mail client does when you send a message), your computer will send it all the information in the message, including who it is from, where it is going, and what it says. The SMTP server then sends it to a mail server, where the recipients' names will be looked up on a DNS(domain name server), and then the message will be delivered. The recipient will receive the message, normally using POP3(Post Office Protocol). So, in essence, an SMTP server is the first step to delivering an email message.
