If you baked bread without yeast you would come out with a rock because its solid bread. though, when you add yeast and allow it to get warm the yeast release oxygen bubbles blowing your bread up like a balloon creating the small air pokets in bread that makes it taste great. the bubbles also try moving to the top creating the holes.
Yes cheesy bread taste like pizza
Yes, white sandwich bread is made with yeast.
Bread dough will become what is called "blown" dough. It will "blow up". Because of the gas bubbles produced by the yeast, it will keep growing until it has no structural integrity. It won't explode but may rupture and then will start turning into a puddle of goo. It also produces less than desirable looking bread and developes a bitter taste.
Yeast causes bread to rise. EDIT: Yeast reacts with sugar to make carbon dioxide gas. this creates bubbles in the bread mixture, causing the dough to rise. When you cut into a loaf - all those little 'holes' in the bread are the spaces left by the carbon dioxide bubbles !
