Ask a good butcher or a Whole Foods type place for pork belly. It's uncured, unsmoked bacon, which is what the Chinese bacon really is. I've found it's good to marinate the pork belly in soy, five spice and some wine, then roast it slowly in an oven until it's crisp before using it in any kind of Chinese dish (stir fry, hot pot, etc.)
