Firstly, the food was less healthy for people to eat. Nowadays food is checked and only food that is un-harmful is put on the supermarket shelves. But in Norman times, they just ate food as it was; obviously they had no sell-by dates or fresh-keeping packets. People did a lot of different things to preserve food. They dried fruit to make raisins, Prunes, dried peas, and dried apples. They also pickled vegetables, meat, and fish in brine (salty water) to make pickles and garum, a fermented fish sauce. When meat rotted, people would pour a sauce on it and eat it anyway - yuck! They would also hang up meat with string, and then not eat it for years. That can't have been very fresh tasting!
Secondly, the food was much more basic in Norman times; they obviously had no processed foods, or food with artificial colours or flavours. For extra flavouring to their meat they would use herbs. Also they had no food like chocolate, because cocoa beans come from places like Africa. In those times they wouldn't have been able to have cocoa beans or chocolate imported, obviously. This works the same for other products we have imported nowadays from exotic countries. Food was prepared by hand, they didn't have factories!
