Earth would be much, much colder, as the sun could only shine on anywhere from 1/2 to 1/6 of the surface of the earth at one time. I am not saying this would be the only change, but this is one of the biggest / easiest to explain change I can think of. The earth couldn't possibly have the shape of a cube because it is way too massive; its own gravity would eventually force it into something closer to a sphere. But even if the land mass could be forced into a cube, the water and the atmosphere would not conform to that shape, and so there would be a very strange arrangement for oceans, etc. If the water were evenly distributed, it would tend to pool around the centers of the 6 faces of the cube. That would certainly have massive effects on the planet's weather. And the 8 "mountain" regions would very likely be completely uninhabitable. I think there would be little if any breathable atmosphere at those points.

Why do some climatologists think that climate change is causing extreme weather?

Temperature and temperature differences are among the key driving forces in weather on earth. If earth's climate changes then temperature patterns will change, which can shift the occurrence of weather events, including extreme weather. Additionally, heat is energy that powers some types of storm. The logic follows that warmer temperatures means more energy and thus more and stronger storms. However, the situation of climate change and how it affects storms is more complicated than that.
