Generally not. If you have to do it behind their backs it means you believe they would not approve. If both parents disapprove there is a high probability that they have a good reason to disapprove - which means you shouldn't be doing it - behind their backs or right in front of them - or at all.

Unless you are emancipated, or your have your parents' permission, you don't. You can run away, but your parents have every right to call the police and have you brought back. You are essentially property until you are 18.
Listen and do as the parents request. Or, get a job and pay for your own phone. Avoid long conversations when you should be doing homework or sleeping--just difficult to do as you must when you are tired.
It is the law that a minor can't sign a contractural agreement so you probably need to get your parents involved and make a gentleman's agrrement with them that after you are able to sign on your own that they will back off from the business. But, they are your parents and if they help you out now the right thing to do would be to help them out when you are able.
