Pineau des Charentes is made from lightly pressed Grape Juice and one-year-old cognac eau-de-vie (which is the distillate of the same grape juice). The two are assembled when the fresh grape juice has undergone a few days to a few weeks of fermentation, although some assembly is almost immediate.
