You need a balanced diet to be healthy. Other than throwing up from over eating, (see: Cool Hand Luke movie) it is doubtful that an over indulgence on a one time basis will cause irreparable damage to anyone except those with an allergy.

poached eggs is simply cooking eggs in a liquid. be it a flavoured liquid or not, it is naturally healthier if you poach in a liquid with just a pinch of salt or none at all. as fried eggs you will need butter or oil, some salt and pepper, so compared to poaching your eggs, this is not as healthy or nutritious.
