Good question! For one thing, cheese can make you fart- a lot, which could cause cramps, since you're laying down, and it is still digesting. Another thing, is that it can give you terrible nightmares. I don't really know exactly why, but that's what my doctor told me!
I don't know if there are adverse side affects to the consumption of cheese before sleeping. However, as a rule it is better not to eat for at least an hour before sleeping. Consumption of calories when you will not be burning those calories will lead to weight gain.

This hasn't yet been proved true by doctors, but for a lot of people, it can not only give you nightmares, but can make you really gassy, because you're body is still digesting, and your laying down, which makes it harder. Both of these put together, can really give you a bad sleep!

No, there is no particular food that causes nightmares. But different individuals are sensitive to certain foods that might cause indigestion or abdominal pain which can disturb sleep. Disturbed sleep, in turn, can cause nightmares. So it is not the food itself that is responsible for the nightmares, but the indigestion and discomfort that disrupts sleep.
