well there has been alot of controversy over this topic in the past couple years but heres the scoop : while instant is a nice alternative and a quick fix , however there is lots more presservatives in any instant food including instant rice . think about it they need to keep the rice in this case healthy and fresh until you eat it so they need to preserve it and incase you didnt know perservatives are not very healthy for you but anyway i eat instant rice every once and awhile so its ok if it wasnt healthy enough to consume it would be pulled off of the shelf at stores.

if the recipe calls for reg. rice, do NOT substitute if you don't have to, if you do, use less instant rice and cut the cooking time in half. You will find that it will not be quiite the same in texture and flavour.

It depends how you prepare it. If you cook the rice without much condiments and without the chicken fat, then you have a very healthy chicken rice. Enjoy.
