Is it OK to leave refrigerators unplugged for six months providing doors are left open?

I haven't had any problems with doing this with a clean refrigerator. Usually have put a piece of foam on the door and taped the door to it, leaving a 2" opening. Also put a box of baking soda in there. This makes sure that the door does not accidentally get closed and improves safety for small children who may become trapped inside (not an unusual occurrence).
