All three of these sentences can be used. Saying 'our memory of you lives on' restricts the sentiment to the people who are actually saying this. The other two versions don't apply this restriction, but imply that many other people may also remember the person who has gone.

Think of the brain like a computer and our memory is one of the motherboard parts. We need memory for learning, to know who we are, and to know family and friends.
