Drink the vanilla extract. Its mostly alcohol. It can't be imitation.....I don't think, anyway.. :)

Vanilla extract can be replaced by almond, anise, mint, lemon or any other flavoring of your choosing. You also can leave out the flavoring or extract entirely. In that case, the cookies will be butter-flavored.

I'm assuming vainla excart is vanilla extract. since the vanilla extract is only a flavoring agent, You can safely omit it, however the cookies will taste different. You can substitute have another extract (like almond!), but I would probably only use half the amount called for in the recipe.

Vanilla flavoring is subtle, and you can make the recipe without it. But if you want SOME kind of flavoring, you can use almond, rum, or chocolate extract.

No, you cannot substitute maple syrup for maple extract. That is because an extract, a concentrated flavoring, is used to add flavor without adding other ingredients, or changing the consistency of the recipe. Only pure or natural maple extract has a percentage of maple product.
To make Vanilla Sugar without having to use Vanilla Beans (Which are rare and expensive in Grocery Stores) just use Vanilla Extract and Sugar in a ratio of one teaspoon of Vanilla Extract to every two cups of regular granulated sugar. Then spread the well mixed vanilla sugar on a baking pan lined with wax paper to dry. *Note* To make Vanilla Sugar with a Vanilla Bean, just crush a Vanilla Bean and mix with Sugar. Then store until needed. When needed, sift out all large bits of ean, until just sugar is left. Store bean with sugar until bean looses flavor.
