Marinara sauce
Marinara sauce originates in Naples, Italy and can be translated as Mariners (Sailors) sauce. It is said that the sauce was made by sailors or their wives as the high acid content of tomatoes slowed spoilage when on longer sea trips. The addition of red wine might also have been added after it had cooled as this would also help to preserve it. Then olive oil poured on top to seal it.
The basic version is only tomatoes, garlic, olive oil and a herb.
Variations can include the addition of capers olives and spices
Strictly speaking, marinara should not be served with cheese.
Ingredients:
Heat the olive oil in a large skillet. Add the onion and fry over medium heat until translucent. Add the garlic and cook for 1 more minute. Add the wine and cook on high heat, until almost all the liquid evaporates
Stir in the tomatoes, water, herbs, salt, and pepper. Cover, and vigorously simmer for 15 minutes.
Remove small dried chilli.
Add olive oil just before serving for a glossy sauce.
