It's preference, however, ash is a better performing wood for baseball bats. Maple bats require more water density to be removed from bat in order to make light enough to use. This causes the maple bats to become brittle and break easier. I love the Akadema and rawlings bats best. Both are hand selected.
There are many varieties of both maple and beech. While most maples are harder than American Beech, Australian or Highland Beech are even harder than any maple.

They made both depending on culinary requirements.
Yes you can, but you will have to poke around on the net to find the sugar content of maple syrup and adjust accordingly. Brown sugar is garbage. Most brown sugars are refined white sugar with added mollasses. Be reminded that there will be a strong maple flavor. Also take into consideration that there is no better sugar than no sugar in beer, you simply use nearly twice as much malt instead and you will get the desired 4 to 5 % alcohol content. When bottling you add the remaining malt from the second can that you have stored in the fridge.
There is only a very slight tendancy for darker maple syrups to have slightly higher levels of some minerals than lighter syrups. It is not statistically significant in most cases. Darker maple syrups do tend to have higher invert sugar levels and a stronger flavor than ligher colored maple syrups.
