Potatoes are the portion of the plant called the "tubule." It's the underground stem that the roots protrude from. The nodules that form as roots begin to grow are called "eyes." The myth is that these contain a higher concentration of the poison solanine, found in commonly in the nightshade variety of plants. However, they are not poisonous, just fibrous and not considered palatable.

Potatoes are spuds; basically roots, that grow in an edible plant. The eyes are extra roots that they can sprout some additional buds from and get nutrients from the earth. These dense entry points are darker than the white flesh and thus look like 'eyes'.

The eye of the potato are the little roots that start growing. If a wedge of a potato with one or two eyes is planted in a garden it will grow into a new potato plant. Potatoes can also be propagated by using seeds collected from potato flowers.
