Off the shelf you can purchase up to a 4 SATA to eSATA adapter, but you will need to contact suppliers directly through an internet search to see if they will custom build you a 5 SATA to eSATA adapter.
I am building an external hard drive out of an old PC case and I want to have multiple drives in it to maximize storage capacity. But I want it to plug into only one eSATA port. Are there any adapters or things I can use to do this?

I know of no such adapter. 5 lug hubs are smaller and more lighter duty than 8 lug hubs. Even there were such an adapter, I wouldn't recommend putting an 8 lug wheel on a 5 lug hub. Bad Idea.
