Is there a way to switch off the headlights on the 05 Vibe after the auto sensor turns them on so that I can just have the running lights on sometimes?

with the key off, set the parking brake, that disables drl (daytime running lights). you can now turn the ign on and drl wont be on. you can now listen to radio etc w/o killing battery.
