Your coolant level is low.
When it ran low on coolant, the head overheated and warped. Now you have hot exhaust gasses venting directly into the engine's coolant system through the damaged head gasket that gave up when the head warped. You'll need to have the head resurfaced. That means, pulling the head(s) and everthing that is in the way. If there are very many miles, you may as well do the valves and guides while you've got the head(s) off.

First make sure the Cap on the coolant tank is screwed down snug and not loose, lose of pressure from a loose cap in the coolant system can trigger your light to stay on. If this is not the case then Drive your car as LITTLE as possible until you can get it into a repair shop! Just because your coolant tank is full doesn't mean that a problem isn't still lingering. I had a 95 Corsica with the same problem and came to find out the light was staying on because of a pressure imbalance in the system but this wasn't from a coolant cap but because the head gasket had cracked causing the antifreeze to slowly leak into the oil. A way to check if your antifreeze is leaking into your oil would be to take off the oil fill cap and look down inside, if the oil has seemed to have gotten foamy and tan colored then you got a problem. If not you may have pipes outside that are leaking causing a pressure imbalance.
Mine came on to tell me that the coolant was low. check that. Remember to use the right kind of coolant and don't mix different kinds.

it sounds like your primary coolant fan has quit and when you turn your A/C on it causes your secondary coolant fan to turn on and then cools the coolant in your radiator!
most likely the sensor in the bottom of the coolant reservoir is gone change reservoirs then see
There is a sensor that is in the overflow bottle that may be bad causing the "low coolant light" to illuminate. The coolant level switch is located on the bottom side of the coolant tank. The switch contains a reed switch and a magnetic float. When the coolant level is normal, the float rests away from the reed switch, causing the switch to be open. When the coolant level decreases in the coolant recovery tank below a specified level, the float rests on the reed switch and the switch closes, illuminating the LOW COOLANT light. The coolant level switch is a part of the coolant tank. If the switch needs to be replaced, the coolant tank must be replaced.
Check your water pump. Does the car overheat?
When that happened on my 97 Lumina the coolant was leaking into the engine, and the light came on even when I added coolant because the whole system was just messed up. I had to take it in to the dealership and it cost 1,300 to fix it, so get it in ASAP before more damage happens.
