It's a good question, since I just made the decision to do so, figuring that I can easily add french doors to either the dining room/foyer entrance or dining room/kitchen entrance if I didn't like the visibility. In my home it made the dining room space more usable and the area look much more spacious. But the renovation, which included a kitchen remodel, isn't done yet.
If you're concerned about resale I say it's easy enough to put doors or a wall back up if needed.

Build your front room, or lounge/living room Build the back room, or sun room (the reason for doing so is that you can make the rest of the rooms between) Make the rooms in between (kitchen, dining, bedroom bathroom, etc, etc) Do the wallpaper and floors Add your objects Might as well do the cheats if needed.
Latex (water based paint) is generally used for the dining room or front room walls. Oil based paints are generally used in the kitchen and bathroom, but Latex paint has come such a long way you can even use it in both those rooms as well.
