The main reason a batch of fried chicken is soggy is that the temperature of the frying oil/grease is not kept hot enough (about 350 deg. F or 177 deg. C), thus allowing the chicken to absorb more oil/gease than desired. Even though the oil/grease might intially be at the desired temperature but if the cook crowded the pan with too many chicken pieces, the frying temperature would be lowered, creating the soggy condition in the chicken.
