I spent 8 hours cooking a stew that I was devastated to find had onion and red wine overkill- both are acidic ingredients so I managed to correct it with two tsps of flour (a base) dissolved in 1/4 cup of warm water. I added it to my cooker and let it simmer uncovered for 15 minutes. I also heard somewhere you can also try sticking one raw potato in for 30 minutes- supposed to suck up excess salt and onion tastes- and then throw away before you eat.
You can add more mashed potatoes to balance the taste of the onions.

He is probably eating too many onions. Or too much onion dip.
1 tablespoon dried minced onion = 3 tablespoon fresh minced onion
This means that you should cut an onion into small slivers for later in the recipe.
It depends on how it is cooked and what is used in the recipe. For example, while sushi with... say salmon, cucumber and green onion will be counted as a fairly healthy option, eating too much tempura will be about as healthy as hamburgers.
Julia child's recipe uses Merlot, with its lower tannins, in her French Onion Soup recipe. I've found none better.
Adding too much liquid, be it wine, water.
