Off hand, two excellent sources are spinach and Okra. Okra is a pod vegetable which can be fried or boiled. It comes frozen or fresh. When fresh, it is "hairy" and must be washed to remove the natural fibers which give it that appearance.

If served boiled, boil the vegetable for about 4 minutes and pour off the water and rinse to keep the vegetable from becoming "slimy" which is a common complaint from new users. Boil gently until the vegetable is tender, serve as a side dish.

Another tip is to choose small pods for boiling, as they are more tender.
