Elements are made purely of one type of atom. For example, pure sodium is made of 100% Na (sodium atoms).

This is not to be confused with compounds. For example, water (H20) is a compound and not an element because it contains both Hydrogen and Oxygen atoms in its molecular formula.

Pure oxygen is in the form of O2. Even though it is made up of molecules that have 2 atoms (each molecule consists of 2 oxygens attached to each other), oxygen is the only element present, and therefore this is a pure elemental substance.

If you are referring to the Periodic Table of elements, they exist in the 3 states of matter: solid, liquid and gas. Elements are mostly in the solid metal state. There are metals in liquid form too, like Mercury and bromine. And of course the Noble gases.

Fundamental particles as electrons, positrons, muons, quarks etc. haven't subparticles; particles as neutrons and protons etc. contain quarks and gluons.

It is made up of something that is either indivisible (photons, electrons), or is no longer of interest if divided up (protons, neutrons into up and down quarks).

Why are the subatomic particles not considered the simplest form of an element?

The simplest form of an element is an atom. Subatomic particles are not a form of the element; they are a "building block" of an element.

Is gas made of tiny particles?

Yes, everything is made of tiny particles - if it is an element then the particles are atoms of that element, if it is a compound then the particles are molecules composed of atoms of the elements which make up the compound.
