Although there were atrocities committed by both sides during the Vietnam War, they were by no means restricted to the Viet War. Nearly all wars consist of "cruelties" committed by combatants. The NVA, like the US Army were regular uniformed soldiers and very rarely committed atrocities, at any rate, not more than the allied forces. The VC, being (non-uniformed) guerrillas, were the notorious units held responsible for the vast majority of "cruelties."
As happened in the US Civil War (involving guerrillas), men were sometimes tied to a tree, sometimes partially skinned, beheaded, etc. These are not accepted rules "of war" and often times result in criminal war trials once the conflict has ended.

But what really happened was the shifting of a "guerrilla" war in South Vietnam (RVN=Republic of South Vietnam) to a "conventional" war in South Vietnam AND open warfare against North Vietnam on or after the Tonkin Gulf sea battles (called incidents) on 02 & 04 August 1964. Vietnam was so touchy, that special terms had to be applied by the US administration, some examples follow: 1. The two sea battles in August 1964 were called "incidents." 2. The invasion of Cambodia on 01 May 1970 was called an "incursion." 3. Vietnam War is sometimes called "Vietnam Conflict"; which would also make the US Civil War a "Conflict" since it was not a declared war either.

Another example is the Falklands War, fought between Argentina and the United Kingdom over the disputed Falkland Islands. The Vietnam War is also an example, as it was fought between North Vietnam (supported by the Soviet Union and China) and South Vietnam (supported by the United States and its allies).
What, precisely, is the difference? "Conflict" sounds more civilized and polite, which the Vietnam ... whatever ... definitely was not. However, while the US Congress authorized the engagement of the military in the Gulf of Tonkin Resolution, they never formally "declared war". So there is some justification in using a word other than "war" for it, though in practice there's little real difference.

I would go with Cannibal Holocaust. Wikipedia states that there are 7 killings of real animals for the movie. As well as Platoon, a Vietnam war movie, had some animal cruelty in it as well. Although arguments have been made from it being fake, others say it is real cruelty and the dispute continues.
