I've only tried this w/banana/pumkin bread and it worked out really great!
1-1/2 cups Sorghum Flour
1-1/2 cups Potato Starch
1 cup Tapioca Flour
Blend all flours together well and store in fridge! Don't forget that when you bake you must add xanthan gum or guar gum or your recipe will crumble (1 tsp gum or less per cup of flour)
