Irradiation kills any bacteria present in the food which prevents it from going off. Irradiation can be performed on food that is already sealed in packaging meaning that it will then be sterile which can give it a very long shelf-life. Irradiation can kill bacteria without heating the food when doing so would destroy or change it e.g. fruit.
