The cap is called a kippah or a yarmulke, but it's not necessarily black - if you visit a store selling Jewish items, you will see them in various colours.

In the Talmud (the books of Jewish law), it states: "Cover your head in order that the fear of Heaven may be upon you" (Talmud, Shabbat 156a). Most rabbis agree that it is a custom rather than a law, but is nevertheless very ancient and widespread and most Jews would not dream of entering a synagogue without one. Most synagogues keep spares just inside the door so that you can wear one if you don't have your own.

Orthodox Jewish men - those from Charedi or Chassidic communities - tend to wear black kippot (the plural) all day long, while those from Reform and Liberal communities wear them in any colour or not at all. Progressive synagogues, which are very liberal, do not require people to cover their heads while inside.
