Having been to France many times and being in the construction industry and having helped build a house in France, I can tell you that they are the same as any other new world country.
They use bricks and mortar and timber. They have clay tiles and natural slate on their roofs. The high rise buildings are set in cement concrete just the same as any where else. I saw a few thatched roofs too but not many.
