The Enzymes break down the food before it goes into the stomach so the food is easier for the baby to digest. Also the baby has no teeth or very small ones so they are not very good at chewing or crunching up food. If the food is not broken up much in the mouth, there will be a smaller surface area for the babies enzymes to act upon.
To conclude, Enzymes are simply used to "pre-digest" foods and you eat them lol.
