What are the uses of emulsifiers?

I'm just researching this now and i think its to add body to food and for example if it wasnt added to mayonnaise , when you bought it you would be able to see vinegar and egg separated, emulsifiers mix them together and hold them together. They are also used in jam, bread and ice cream.

Emulsifying agents are used in many things to prevent separation. The most common foods that contain emulsifiers are mayonnaise and margarine. Many commercialized products such as sauces, dressings, puddings and pops use emulsifying agents to ensure that separation does not occur and to allow a longer shelf life. Emulsifying agents are also used in baked products to make the batter is incorporated which produces a lighter and fluffier baked product.
