Many people seem confused about the difference between priests and monks.
All monks and nuns took four vows: poverty, chastity, obedience and stability. Poverty meant that they could never own anything of their own; chastity meant that they could not marry or have any relationship with the opposite sex; obedience meant unquestioning obedience to the Rule of St Benedict and to the Superior of their monastery or nunnery. Stability meant that they would never leave the monastery or nunnery without permission and would always live the cloistered life.
Priests were not bound by oath, but chastity was part of the conditions of becoming a priest, regulated by Canon Law. Many ignored the regulations and got married anyway.

Cement was something medieval people did not write about much, if at all, so there is no written historic record of its use during that time. It seems, however, that it was used by skilled craftsmen who preserved knowledge of it from ancient times, as there are some medieval structures in which it was used. There is a reference link below.
After the fall of the Roman Empire (in the west) Europe was in what we call the Dark Ages, and during this time science (and most everything else) was inferior to what the Romans had had. It took a long time to regain Roman technology but at some point during the Medieval times we began catching up to them.
Beginning in Roman times people started to bury the dead when Christianity took hold, so by the middle ages burial was the preferred method. At times during plague events when there were thousands of dead some bodies were burned, but generally they were buried. This was true on battle fields as well.
