It remembers the final act of judgment of God against Pharaoh and Egypt in order to free the Israelites from slavery. After various plagues, because the Pharaoh would not give in, God declared that he would come through Egypt in the night and kill every first born male, whether human or animal. But he told Moses to tell the Israelites that in order to protect their first born, they had to sacrifice a lamb that had no defect and to spread it's blood on their door frames. Then when the angel went through the land that night killing the first born males it would 'pass over' those doors which were daubed in lamb's blood.

Following this catastrophic judgment, the Pharaoh finally gave in and gave the Israelites their freedom.

The Passover tradition was first started in Exodus 12. It in all generations since Moses, and Jesus can be seen celebrating it the night before he died, which is detailed in all four Gospels, Matthew, Mark, Luke, and John.

The Passover (not the New Covenant initiated by Jesus with his disciples the night before his death) was celebrated on Nissan 13. This was the night that the angel "passes" through and killed all the first born of Egypt the last of the 10 plagues. Though the passover was observed by the nation of Israel it was no longer required of them after Jesus death. Jesus instructed that his death be observed from then on. that was Nissan 14. To this day that memorial should be celebrated by the passing of the wine and bread symbolizing Jesus shed blood and his perfect body given as a sacrifice for all mankind that we might have hope of being found righteous in Gods eyes. This celebration is observed by Jehovah's Witnesses each year on Nissan 14 of the Jewish calender. This celebration is in no way connected to His Resurrection as many have been thought. His Resurrection was not what he instructed his followers to celebrate. (Mark 22:14-20 and 1 Corinthians 11:23-26)
