Many liquids will work. Without specifics, i would say -1st , white wine, or any other type of alcohol or spirit.

Non alcohol - try Tomato Juice, clam juice, veggie, Chick, or beef broth. And water.

Experiment with substitutions ! you may create something better!

I've Heard the Grape Juice with a splash of vinegar in it can be used to replace red wine. But have yet to try it, if someone could verify that would be great.

In addition to red wine, one can use white wine, beer and distilled spirits in cooking. Alcohol is a flavor enhancer.

Water, stock and broth are also options.

You probably could, if you are using a little, but the vinegar will give the food a much different flavor than the wine. -------------------------------------------------------- Vinegar is more sour than wine. You could use fruit juice plus just a little vinegar. Depending on what you like yourself, you can substitute other liquids like beer, tomato juice or chicken broth.
