Believe it or not but, Alice Waters did not start off with a food/cooking background Her career launchers were as a teacher and activist. She opened the famous bistro Chez Panisse in 1971 Berkley CA), As a result she started what was to become known as California cuisine The foundation of her cuisine was based on: # Local Ingredients # Fresh fruits, veggies, meat (especially chicken) # Seasonal Ingredients It was the Slow Food Movement thirty five years before Slow Food. Ms. Waters started a program for public school children that encouraged healthier eating. She also taught children how to grow their own food.
