Make sure battery cables are tight and clean especially ground at engine
Check starter wires that loosened up and are contacting. Sticking solenoid.

The RPM normally increases as you push the race pedal in your VW. However, it is possible that the wire for RPM might be broken, causing it to suddenly increase without race.
Check brakes for seized caliper causing the pulling & this may have warped a rotor causing the jerking. Rule of thumb is if it pulls left on braking then the right brake is sticking
