It is possible your cam is starting to go bad too. A pain I know but that is the symptom I had right before mine failed in my 1995 Voyager. About two months later it would not start at all until I replaced the cam. There is no guarantee I'm right just an extreme possibility
Yes, the thermostat needs to be installed for proper engine operation.
It is on the throttle body opposite of where the cables attach.
Changing a thermostat in a 1997 Plymouth Voyager is very easy to do. You will need to follow the radiator hose to the thermostat. You will then take the hose off the thermostat and remove the two bolts holding the thermostat in place. Make sure to clean the area before putting the new thermostat in place.
Need to know which engine you have.
The fuel does not go to the throttle body it goes to the fuel injectors.

Follow the top radiator hose to the engine, the thermostat is at the end of it.
