Originally Cajun cooking comes from France. The name cajun derives from Acadien. The acadiens were people who moved to what is now Canada from the area of France north of Poitiers to seek a new life in the territory of Acadie so called. They were then displaced from Canada and were obliged to settle in Louisiana (at the time a property of the French Crown but later purchased by the newly established USA in 1803.
Acadien became corrupted in pronunciation to Cajun. The French origins of the cuisine is evidenced for example by the popular Cajun dish of boudin. Boudin is simply the word for a type of black pudding or blood sausage.
