Some highschools may offer special courses in hospitality. Also, you may be able to concurrently take some courses at the local community college. Take Math and bookkeeping if it's available. From the time we go to school all of us should be taught business economics and we'd be far more ahead of the game. High Schools don't offer much other than Math and Bookkeeping. Once you graduate that is the time you can either go to College or take night courses and get information from Financial Advisors at any banking institution. Many people can do this on their own if they want, and can take the courses they need. You need to know how to run the restaurant, how to treat staff, what salaries to pay, what deductions, the Health Rules and Regulations (because your restaurant will have Health Regulators coming to check to be sure you run a clean restaurant.) You need a good gimmick to attract customers, good food, pleasant staff, and you present to greet customers (if you are going on the higher end of the scale re restaurants. The courses you take in high school don't really matter much when studying to become a pediatrician. It takes an additional 11 years of schooling after the completion of high school to become a pediatrician so you will have plenty of time to take required courses then. In high school you should focus on courses you like and that you can get good grades in. A good GPA will help you to get into a better college, which may make it easier to become a doctor.
High School is not too important, but you should take college prep type courses. Coroners normally have a medical degree, so you need good college grades to get into medical school.
You'll need to take premed courses in college before you can become a surgical technologist. The best High School Courses to help you prepare for that are math and science classes, especially the more advanced biology courses.
