The symbol at the centre of the flag is inspired by a legend. The legend dates to 1327 when the Aztec's god said to build their city where they found an eagle eating a serpent sitting on a prickly pear cactus. The city now is Mexico City. The city was called Tenochtitlan. The eagle eating the serpent was a symbol of a religious belief of triumph. Green represents independence from Spain, White for the purity of the catholic faith, red for the union of Europe and America. In the 1800's President Juarez changed the meaning of the colours. Green meaning hope, White for unity, Red to represent the blood of the country's heroes.

The meaning of the Goliad Flag has nothing to do with slavery, or "African" American history. It was a flag raised over the fortress of Goliad in Texas during the Texas Revolution against Mexico. It's meaning to Texans are varied, but fall under "I would rather cut off my right arm, than live under tyranny."

There have also been two state flags, with the current state flag chosen in 1920. There is a possible fifth. The Republic of Texas claimed 1/2 of New Mexico between 1836-1845. It's unknown if their flag actually ever flew over New Mexico.
