Saffron is used mainly in Persian dishes. However it has found it's way to Arabic and Indian dishes as well. In Persian dishes is used to give color and flavor to rice. After cooking the rice, the Persian way which is kind of baking, you add a pinch of saffron to hot water, mix it well and add about two to three table spoon of rice to it. Mix it well and add the saffron rice on top of the rice prior to serving. It tastes great. Just be careful since Saffron will increase the heart beat. So if you have heart problems, use it in moderation. It is also said to be good for men's sexual health since it increases the blood flow.

a little saffron goes a long way as a colorant and flavoring for cheeses, pastry, rice and seafood. Saffron is used in spice blends for paella, curry, kheer and bouillabaisse.
